To die for….Pulled Pork
I love pork, I do. This pulled pork recipe, cooks perfect everytime. Cook a large shoulder and you will have leftovers for all sorts of yummy dishes which I will post later this week.
2 onions, peeled and quartered
1 whole pork shoulder roast (About the meat… I always buy certified organic pork, at the very least do your best to get meat that is from an animal that wasn’t given anti-biotics.)
Salt and freshly ground pepper
One 11-ounce can chipotle peppers in adobo sauce
2 cans of soda (Dr. Pepper or Coke)
4 packed tablespoons brown sugar
Preheat the oven to 300 degrees F.
Start by placing the onion quarters in the bottom of an oven safe pot. Sprinkle the pork with salt and pepper, and then place on top of the onions. Pour the chipotle peppers over the top, and then crack open the cans of soda and pour them over the whole thing. Add the brown sugar to the liquid and stir.
Cover the pot, place it in the oven and cook for at least 6 hours, it might take longer depending on the size of your roast. Flip the roast 2 0r 3 times during the cooking process. Cook it until the meat falls off the bone, that’s when you know it’s done! Fork tender wonderful.
Remove the meat from the pot and shred completely. Then return the meat to the pot and keep it in the juice until you need it. Delicious!
Now this pork is obviously great for sandwiches but the meat is also great for a pulled pork pizza, barbecue sundaes and pork quesadillas! I will post the recipes for these delicious dishes later this week!
