Strawberry Hand Pies



 Perfect Portable Dessert

Great Addition to Your  4th of July Celebration!


2 cups unbleached all purpose flour

1 tablespoon sugar

1 teaspoon salt

1 cup cold unsalted butter cut into cubes

1 large egg

2 tablepoons cold milk


2 cups trimmed, quartered, fresh strawberries

3  tablespoons sugar

2 teaspoons cornstarch

1 teaspoon lemon juice

1 large egg, beaten, for sealing dough

topping (optional)

Coarse white sparkling sugar


Get out your trusty food processor.   Pulse together the flour, sugar and salt.  Then with the motor running, slowly put in the cubes of butter, so they are incorporated into the flour mixture.  Add the combined egg and milk, processing to make a cohesive dough.  You can also do this by hand, it just takes longer….

Take the dough out of the processor, if the dough is kinda sticky add  a small amount of flour until it doesn’t stick to your hands.  Divide it in two, wrap in saran wrap and place in the refrigerator for 1 hour.

While it’s chilling, make the filling 🙂  (I’m such a poet, or maybe a rapper…)  Combine all of the ingredients except the egg in a saucepan and set over medium heat.

Cook until the mixture starts to thicken, between 5 and 10 minutes.  Transfer to a bowl and cool to room temperature.

Preheat the oven to 350 degrees.  Line a baking sheet with parchment paper.

To assemble the pies, place one piece of dough on a lightly floured work surface, and roll it into about an 11 inch circle.  Using the top of a glass or a circle cookie cutter, cut out circles.  Repeat with the remaining dough.  Using a star cookie cutter, cut out a star in the center of half of the dough circles.

Place a teaspoon or two of filling in the middle of  the whole circles , (eyeball it, you may want more, maybe less, depending on the size of your circle.  You don’t want so much filling that it oozes out of your hand pie.)

Using your finger, dip it in the beaten egg mixture and run your finger around the edge of each circle and then place a circle with the star cut out on top of circles with the filling and gently press on the edges.  Using the tines of a fork, dip it in the egg and crimp the edges of each hand pie to seal.  Brush the tops with some of the egg, sprinkle with the sparkling sugar (if using) and transfer to the baking sheet.

Bake the pies for  20 and 25 minutes, until they’re a light golden brown.  Remove them from the oven and cool on the pan.
