So this week, I’ve been posting several ways to use leftover pulled pork and I promise this is the last idea….for a while…. Don’t think for one minute that it being the last post means it’s the least tasty option…oh contraire . This is a great idea for a quick light meal pared with your favorite salad. Put out different ingredients and let everyone create their own. Pulled Pork included. My ingredients for this particular create your own quesadilla dinner included:
Leftover Pulled Pork
Bacon (fryed ahead of time)
Goat Cheese crumbles
SmokeHaus Blue Cheese crumbles
shredded Sharp Cheddar Cheese
Diced Red Onion
Chipoltle Cream Sauce (recipe follows)
Quinoa Wraps (you can of course use regular flour tortillas)
I heat a tablespoon of olive oil in a grill pan (you of course can use a regular frying pan, or bake them in your oven) to “fry” the quesadilla and get great grill marks on the outside. Flip the quesadilla a couple of times until crisp on the outside and melty on the inside.
Serve them with your favorite salsa, sour cream and quacamole! ole !
Chipotle Cream Sauce
1/2 cup plain greek yogurt
2 heaping tablespoons of mayannaise
2 or more tablespoons adobe sauce from a can of chipotle peppers.
Mix together and spread it on your quesadillas before you spread your ingredients around or use it as a dipping sauce.
