Back to Basics- Homemade Pancake Mix

A sleepover ensued at my house late last Saturday night.  I woke up on Sunday morning and realized I didn’t have pancake mix (little boys at my house love chocolate chip pancakes after a late night sleepover) so I made my own and may I say, I won’t be buying a box of mix again anytime soon.

Back to Basics- Homemade Pancake Mix

6 cups all purpose flour

1 1/2 teaspons baking soda

3 teaspoons baking powder

1 tablespoon kosher salt

2 tablespoons sugar

Directions-

Combine all of the ingredients in a lidded container.  Shake to mix.  Use within 3 months

Homemade Pancakes

2 eggs separated

2 cups buttermilk

4 tablespoons melted butter

2 cups Homemade Pancake Mix

1 stick butter (for the pan to cook the pancakes in)

optional additions- chocolate chips, blueberries, sliced bananas

 

Whisk together the egg whites and the buttermilk in a small bowl.  In another bowl whisk the egg yolks with the 4 tablespoons of melted butter.

Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until combined. Put the two cups of homemade pancake mix in a large bowl and pour the liquid ingredients on top.  Using a whisk, mix the ingredients together just  enough to bring it together (don’t work all of the lumps out)

Melt a tablespoon or two of the butter in a frying pan.  Ladle a cup of mix into the pan and cook until you see little bubbles on the surface of  the pancake.  If adding anything to the pancakes, sprinkle on top and flip.  Continue cooking until golden. Serve with real maple syrup.
