Smokey Pork Burgers
2 cups shredded smoked mozzarella (8 oz)
6 slices uncooked bacon, finely chopped
1 Granny Smith apple, peeled, cored and shredded
3 cloves of garlic, minced
2 Tablespoons chopped fresh flat-leaf parsley
1 1/2 tablespoons chopped fresh thyme
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 lbs ground pork
Vegetable oil cooking spray for the grill
6 soft burger buns
Serving suggestions: Lettuce leaves, sliced tomatoes
For the burgers: In a large bowl, combine the cheese, bacon, apple, garlic, parsley, thyme, salt and pepper. Add the pork and mix well. Form the mixture into 6 burgers, approx. 4 1/2 inch in diameter and 3/4 inch thick.
Preheat your grill and oil the grate of your grill with the cooking spray. Cook on low heat until cooked through for 10 minutes on each side. Brush one side of the burger with barbecue sauce and allow to remain on the grill for another minute or so. If you are concerned about the doneness of the burgers you can also use a meat thermometer, pork is done when it registers 160 degrees F.
Place the burgers on buns and top with lettuce and tomatoes if desired.
