Kicked Up Snickerdoodles

Snickerdoodles are one of my favorite classic cookies.    I’ve been toying with the idea of a kicked up version for some time, not a Christmas cookie in my mind so I’ve waited until after the new year to whip up a snickerdoodle on steroids.  I bought the cinnamon chips I call for in this recipe from the King Arthur Flour website.  I hope you love these cookies as much as my family does!  Let me know if you make them and what you think.

Kicked Up Snickerdoodles

1 cup butter

3 cups Better for Bread Flour

1 cup dark brown sugar

1 cup sugar

1 egg and 1 egg yolk

1 teaspoon vanilla

1 teaspoon baking soda

1/2 teaspoon cream of tartar

2 cups cinnamon chips

4 tablespoons sugar

2 teaspoons ground cinnamon


In a separate bowl gently mix the flour, baking soda and cream of tartar, set aside.  In a mixing bowl beat room temperature butter and both kinds of sugar until creamy and well blended.  Mix in the whole egg and the egg yolk as well as the vanilla until blended.  Mix in the flour mixture one cup at a time until incorporated into the batter.  Next stir in the cinnamon chips.  Wrap cookie dough in plastic and place in the refrigerator for 1 hour.

Shape the dough into 1 inch balls.  Combine the 4 tablespoons sugar and the 2 teaspoons cinnamon.  Roll the balls in the cinnamon and sugar mixture.  Place the balls two inches apart on a cookie sheet.  Bake in a 375 degree oven for 10 to 11 minutes or until the edges are lightly brown.  Cool cookies on a wire rack.
