Chorizo and Rice Torte


I call a dish like this Modern Comfort food. Chorizo, eggs, cheese and rice oh so good! I make substitutions in this torte depending on what I have on hand. I can use green pepper instead of red pepper; chili peppers instead of jalapenos; smokey cheddar cheese instead of monterey jack. I think a sharp cheddar would work well also, it just depends on what you have on hand.

What is Modern Comfort food? First off, it’s not as heavy as comfort food. I classify a dish as Modern Comfort food when a recipe lends itself to substitutions with items in our pantries. I call it Modern Comfort food if it’s very versatile as in we eat it for breakfast, lunch and dinner. It’s also Modern Comfort if it’s also very filling… comfort food yes, but, more than that…Modern Comfort food.

Chorizo and Rice Torte

2 tablespoons extra virgin olive oil
1/2 lb chorizo, casings removed
4 plum tomatoes, seeded and chopped small
1 medium yellow onion, diced
4 cloves garlic chopped
1 red bell pepper, seeded and chopped small
2 jalapenos, seeded and chopped small
salt and pepper
a handful of cilantro
1 cup cooked rice
12 large eggs beaten
2 cup shredded monterey jack cheese

Hot Sauce to pass around the table.

Preheat oven to 425 degrees. In a 10 to 12 inch ovenproof nonstick skillet, heat the oil over medium high heat. Add the chorizo and lightly brown, 5 to 8 minutes, breaking up the chunks of sausage into a medium to small crumble. Add the tomatoes, onion, garlic, bell pepper, jalapeno’s and salt and pepper, saute this mixture for 5 minutes or so, until the vegetables are between crisp and soft. Scatter in the cilantro and mix in the cooked rice and 1 cup of the cheese. Add the beaten eggs and season with salt and pepper. Reduce the heat to medium and stir to combine. Leave the pan on the heat until the egg has started to set at the edges.

Place in the oven for 15 to 18 minutes, until the eggs have cooked through. Turn the oven to broil. Sprinkle the remaining cup of cheese on top and put the pan under the broiler until the cheese melts.

Pass the hot sauce at the table. Enjoy!
